Potato and Gruyere Tartlets

Who doesn’t like chips and dips or crackers and spreads to nibble on at a cocktail party?  But tiny tartlets with warm, cheesy goodness are a delicious alternative and not too much trouble at all.

To fill 15 tartlets you’ll need

  • about half of a potato, chopped
  • 1/8 onion, diced chopped
  • 1 clove garlic (optional) finely chopped
  • asparagus tips
  • gruyere cheese
  • sea salt and pepper
  • evoo or butter

Bake the tartlets for about 2 minutes at 350, but watch them closely to avoid over baking.  The one on the right below was in the oven for nearly 3 minutes.

In a small skillet, heat a tablespoon of evoo or a pat of butter. Add the garlic, onions and potatoes and cook covered on low until tender. Add the asparagus for a couple of minutes. Let this sit on the stove or in a closed tupperware to stay warm.    

When your guests are ready, spoon the filling into the cooled tartlets, top with shaved gruyere, salt, and pepper

The tartlets can also hold artichoke dip, pepper jelly and gruyere, lemon curd and raspberries, or hummus and red bell pepper bits!
