Ok- I’m not a big pumpkin pie person (I always choose the pecan pie on the Turkey Day buffet), but this is SO yummy. And so much healthier than those pumpkin concoctions that the fast food places or Starbucks are selling.
Pumpkin has vitamins A and C, potassium, manganese, copper, and riboflavin. Not enough for you? Then consider the fact that pumpkin contains considerable amounts of magnesium, phosphorus, iron, folate, vitamins E and B6, niacin, thiamin and pantothenic acid — and is low in salt, cholesterol and saturated fat. So have 2!!
Pumpkin Spice Smoothie Recipe
Prep Time: 5 mins
1 cup 100% pure canned pumpkin
2 cups lowfat milk or soy milk
3 teaspoons Pumpkin Pie spice (or 2 teaspoons cinnamon + 1 teaspoon ground cloves)
4 tablespoons real maple syrup
2 cups ice
Pour the first 4 ingredients in the blender, add 1/2 cup of ice and blend on high. Continue adding ice 1/2 cup at a time until ice is pureed and smoothie reaches desired consistency. Makes 4 irresistible servings
