Vegan Paella (this just means that you don’t have to worry about Ciguatera or Scombroid poisoning) :)

Paella is a Spanish dish with rice, duck, lamb, mussels, shrimp and a long list of etceteras

Here is a vegan version, which really isn’t a Paella at all, but it’s all about the marketing when it comes to feeding teens (who, btw loved this yummy dish….thanks Taylor). Besides, not having fresh mussels can mean a fun little visit to the ER.  No thank you!

.You’ll need:

  • 1 Tbs butter
  • 2 Tbs evoo
  • 1 red onion, chopped,
  • 3/4 cup short grain rice
  • 1 tsp turmeric
  • 1 tsp chili powder
  • 3 garlic cloves, crushed
  • 1 fresh green chile, diced. It’s Hatch season here, so I used a half a hatch. 🙂
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • baby corn,  cut up
  • black olives
  • 1 large tomato, seeded and diced
  • 2 cups vegetable stock
  • 1 cup unsalted cashews
  • 1/2 cup frozen peas
  • 3 tbs chopped parsley
  • 1/8 tsp cayenne
  • salt and pepper

In a wide skillet, melt the butter, and add the oil.  Cook and soften the onions.

Add the uncooked rice, turmeric, cumin, chili powder, garlic, chile, bells, corn, olives, and tomato.  Stir constantly for 2 minutes. Add stock and bring to a boil. Reduce heat and cook for 20 minutes.

Add the peas and nuts and cook 5 more minutes. Season to taste. Add parsley and cayenne.
