Recipe: Egg Cups for a Super Duper Fast Cross Country Runner Girl in the Tenth Grade and Her Lazy Mother who has to make everything in advance because she can’t cook when she’s half asleep.

 

 

I didn’t invent this, but would love to hang with the person who did. She must be pretty clever and easy going.

I call them..

Egg Cups for a Super Duper Fast Cross Country Runner Girl in the Tenth Grade:

Make up a box of stuffing. (which is literally boiling water and stirring)

Press the stuffing  into the bottoms and up the sides of 10-12 greased muffin cups or use paper liners.

Plop a medium egg in.

(or give them a little scramble if you don’t like the yolks of hard-boiled eggs)

Optional additions: cheese, bacon bits, cubed ham

 

Bake at 400 for 20

 cheap and easy!
